Marcy is the wonderful woman who cared for Cathy, Colleen and Cara after their mother died. She was a lovely person and a great cook. Although not a part of the family by blood, she certainly was part of the family. Marcy sent the following recipe to Helen Sullivan McIntyre.
CARMEL CORN
- 8 cups popped corn
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 1/2 cup light corn syrup
- 1/2 cup water
- 1/4 tsp salt
- 3/4 cup butter or margarine
Combine sugars, corn syrup, water and salt in a saucepan. Cook over medium heat, stirring frequently. Test by dropping a few drops of the mixture into cold water. The drops should form soft balls when sufficiently cooked. Reduce heat to low; stir in butter until melted. Pour over popped corn, tossing as you pour the syrup.
Optional: After butter has been added, I sometimes add 10oz of marshmallows. Continue heating and stirring until the marshmallows are melted and the syrup mixture looks somewhat transparent.
